Good andhra recipes with Coconut

Last week, On the occasion of “Akshaya Thrithiya” We offered prayers to the God and we broke the coconut and offered it as Prasad to God. And then I remembered the fact that my mother always told me not to waste Prasad. Keeping this mind I decided to use the coconut in my recipes. During the week I made some mouth watering recipes native to east Godavari.

Bhindi Coconut & Kaju Fry

Ingredients :

Bhindi (ladys finger) ½ kilo (diced)

Kaju (Cashew nuts) ½ cup

Coconut grated ½ cup

Onions 1 big (finely chopped)

Green chilli 3 nos

Red chilli powder ½ spoon

Salt to taste

Oil half cup

For Tadka :

Red chillis 2 nos

Urad Dal ½ spoon

Jeera ½ spoon

Garlic 2

Curry leaves 5

Process :

Shallow fry the bhindi pieces in oil till they become golden green. (tip: Do this on low flame, this will allow the bhindi to cook nicely)

Remove them into bowl with a paper napkin.

Shallow fry the kaju and add them to the fried bhindi.

Sprinkle salt and green chilli powder to bhindi and kaju mix well and set aside.

Drain Extra oil in the frying pan, (leave just enough to fry the onions)

Fry red chillis, Urad dal, garlic, Jeera and Curry leaves (Tadka)

Add onions and green chillis and fry till onions become golden brown

Now add the fried bhindi and kaju to the onions, add sufficient salt

Sprinkle grated coconut and mix well and fry them together for 5 more mins

Serve hot with rice or rotis.

Coconut Fried rice:

Ingredients :

Coconut grated ¾ cup

Rice 1 ½ cups

Green chilli 5 nos (finely chopped)

Salt to taste

Oil three spoons

Ghee 1 spoon

Tadka :

Red chillis 3 nos

Urad Dal 1 spoon

Chana Dal 1 spoon

Jeera ½ spoon

Garlic 3 (finely chopped)

Curry leaves 10

Coriander leaves for garnishing

Process :

Wash the rice, add ghee and 3 cups of water and cook the rice.

Heat oil in the pan, fry chana dal, urad dal, jeera, garlic, red chillies, green chillies and curry leaves. (Tadka)

Add grated coconut and fry for two minutes.

The add rice to the mixture and continue frying on small flame.

Add few drops of ghee to smell nice.

Garnish with coriander leaves.

Serve Hot

Kobbari Pachadi (Coconut Chutney)

Ingredients :

Coconut ½ coconut , chopped

Green chilli 6 nos (slit vertically)

Salt to taste

Chana Dal 3 spoons

Coriander leaves ¼ cup, chopped

Tamarind paste 2 spoons

Oil 2 spoons

Tadka :

Red chillis 2 nos

Urad Dal ½ spoon

Chana Dal ½ spoon

Jeera ½ spoon

Garlic 2 (finely chopped)

Curry leaves 5

Process :

Fry the green chillis, and 3 spoons of chana dal in little oil.

Grind coconut, fried chillis and chana dal, tamarid paste and coriander leaves to consistent paste. (Liquefy)

Add salt to taste.

Remove to a serving bowl.

Heat oil in the pan, fry chana dal, urad dal, jeera, garlic, red chillies,

and curry leaves. (Tadka)

And add the fried spices to the coconut paste and mix well.

Serve with Idli, Dosa or Pongal
